The Leva is operated by utilising a spring lever-action group to create the brew. The group is a very heavy duty 18 kg and is a dipper group, pulling shots silently. This machine can maintain excellent temperature stability. The lever allows the user full manual control over the pressure of the extraction. To operate, pull down the lever for approximately 10 seconds to pre-infuse the grounds. Pre-infusion is the key to developing a flavourful, aromatic crema. Carefully pulling up on the lever begins the infusion.
The Leva is equipped with steam temperature control through the electronic PID (Proportional, Integral, Derivative) display. Users can adjust the temperature by using the up and down push buttons on either side of the control screen. The adjustable display is easily accessible on the front panel of the machine.
A neat feature on the Alex Leva is its unique cup warming system. At the top of the machine is a double decker cup warming surface to accommodate more cups that can be activated with the orange lever that is located right next to the power switch. The orange lever triggers the machine to jet water onto the top of the machine which is then converted into steam.
This machine only runs on a direct waterline connection as it does not have a reservoir or a pump.
